Gemlik, olive country
The black table olive the whole country asks for by name — buy it in the town it's named after, at harvest if you can.
Why do it?
Say 'Gemlik zeytini' anywhere in Turkey and people know what you mean: the small, black, oily table olive that sits on every breakfast table in the country. It has carried a Turkish geographical indication since 2003 and in 2023 became the first Turkish olive registered by the European Union. Gemlik itself is a working town at the head of the gulf, half an hour from Bursa, ringed by groves that climb the hills — and from November the whole area is picking, brining and selling. The producers around İznik and Orhangazi are inside the same protected region.

Go during the harvest — the town smells of it, and buying a season's olives straight from a producer, tasting from the barrel first, is a small Bursa rite. Ask for the salamura (brine-cured) and the yağlı (oil-cured) and learn the difference; then ask for the oil. Pair it with Tirilye along the coast or with İznik inland for a full day. Newcomers who do this once stop buying olives in supermarkets.
