Why do it?
Boyoz exists nowhere else in Turkey the way it exists here — a dense, flaky spiral of pastry with Sephardic roots, eaten warm with a çay and a hard-boiled egg, usually standing at a bakery counter on the way to somewhere. It's small, cheap and completely of this city. Doing it once is breakfast; doing it regularly is how you start to belong.

While you're at it, learn the local vocabulary — in Izmir the sesame bread ring is a gevrek, and calling it a simit will get you gently corrected.
