Why do it?
Boyoz exists nowhere else in Türkiye the way it exists here — a dense, flaky spiral of pastry with Sephardic roots, eaten warm with a çay and a hard-boiled egg, usually standing at a bakery counter on the way to somewhere. It's small, cheap and completely of this city. Doing it once is breakfast; doing it regularly is how you start to belong.

The ritual matters more than the venue: order two boyoz, one egg, one çay, and eat standing like everyone else. Alsancak's old bakeries are the classic hunting ground. While you're at it, learn the local vocabulary — in Izmir the sesame bread ring is a gevrek, and calling it a simit will get you gently corrected.
